Easy and Good Oatmeal Raisin Cookies....



I'm a total sucker for Red clearance stickers. Either at Target or my local grocery store. I picked up 3 bags of these jumbo mixed raisins for 1.20 each( half price). The raisins are gorgeous. They're large and plump, so I went looking for a recipe that would show them off. I went to my pal Anna's blog and found the perfect recipe for easy and good oatmeal cookies. I threw in some coconut because I had about a cup leftovt that was lingering in a ziplock bag. These were moist and delicious. This recipe is a keeper.

Where I've been.....




I've been getting ready for a huge catering job I had the first weekend in June. Because I dont have a commerical kitchen, I can only take job where I can cook on site. I was hired way back in February for this job and because it was my first big job, I really made sure I was prepared.

I planned the menu and then started shopping. Shopping is something I do really well. The job was for 6 meals and 2 snacks over 3 days. I hired a fabulous sous chef to help me out. I litterally could not have done it without her. One of the best things I did to help myself out was preportioning all the dry ingredients into baggies for the many muffins and cookies I made( every single cookie and square was consumed). This way I didnt have to lug all my baking ingredients to the site. I also whipped up the salad dressing for the salad in the picture. I modified a recipe I found on All recipes by using half evoo and half veg oil. I used less sugar, added sesame and poppy seeds and I used a raspberry vinegar. The dressing and the salad rocked!!

I filled the bowl 3 times and each time it was cleaned out. The salad is simply baby spinach, cubes of brie cheese, red onion, strawberries and honey toasted macadamaia nuts( bought at Big Lots for 1.00).
